Extra Virgin Olive Oil

Extra Virgin Olive Oil is obtained from olive trees mainly of the Razzola variety, which are typical of the Vallata di Levanto.

The olives are picked by hand and pressed in the Cooperative’s mill at low temperatures throughout the day.

The oil has an oleic acidity under 0.8 and is not filtered, just purified with regular decantation. The resulting oil is sweet and delicate with a slightly fruity flavor and straw-yellow colour.
